Savory Biscuits


This recipe, modified from one I found in a Taste of Home magazine, makes such unique and flavorful biscuits. They are sure to become a family favorite. With surprising ingredients such as onions and balsamic vinegar, they probably will be unlike any other biscuit you have ever tasted.

*Note: this is a small recipe, the yield is only 6 biscuits, so if you have a family larger than three (or in my case 2 and 2 halves hehe), definitely double the recipe!

Savory Biscuits

1/4 cup finely chopped onion
4 Tbsp cold butter, divided
1/4 cup balsamic vinegar
1 cup all-purpose flour
1 Tbsp sugar
1 1/2 tsp baking powder
1/4 tsp garlic salt
1/4 tsp pepper
1/8 tsp cayenne pepper
1/2 cup shredded cheddar cheese
2 scallions (green onions), chopped
1/4 cup buttermilk

In a small skillet, saute onion in 1 Tbsp butter until tender. Add vinegar; cook and stir until liquid is evaporated. Let cool. I wish I had taken pictures when I made this. The vinegar/onion mixture looked pretty disgusting and at this point I thought the recipe was a bust. So don't worry if yours looks entirely inedible!

In a small bowl, combine the flour, sugar, baking powder and seasonings. With a fork cut in remaining butter until mixture resembles coarse crumbs. Add the onion mixture, cheese and green onions. My "onion mixture" was pretty much a stuck together glob, so I had to "cut" that in too. It looks gross but it will taste good, I promise!

Stir in buttermilk just until moistened (mine needed an extra teaspoon or two of buttermilk, so don't hesitate to add a splash more if your dough is too crumbly).

Turn onto a lightly floured surface and knead 6-8 times. Pat or roll out to 1/2 inch thickness; cut with a floured 2 1/2 inch biscuit cutter. Or, if you're like me and not quite that fancy, the top of a small juice glass works great too! Place 2 inches apart on a greased baking sheet. Bake at 400F for 12-15 minutes or until golden brown. Serve warm.
