Peanut Butter Brownie Cookies

Nathan and Hannah help me mix up the cookies
I love the combination of Peanut Butter and Chocolate, and I also love cookies that are simple enough for my 3 year old to help me make. These cookies satisfy both needs, making them the perfect Family Night treat! I adapted this recipe from one I found on the Pillsbury website.

Peanut Butter Brownie Cookies

3/4 cup peanut butter
1/2 cup powdered sugar
1 box brownie mix
1 egg
4 oz cream cheese, softened
1/4 cup (1/2 stick) butter, melted
1/2 can chocolate frosting (or make your own)

Mix peanut butter and powdered sugar in a bowl with a spoon.

Wrap in plastic wrap and place in fridge. Repeat these steps with the brownie mix, butter, egg, and cream cheese. Allow both sets of dough to chill for about a half hour.

Form chocolate dough into balls about a tablespoon in size and place on a cookie sheet about 2 inches apart.

Form peanut butter dough into teaspoon size balls and press gently into chocolate balls. Flatten dough slightly and bake at 350F for 10-14 minutes.

Allow cookies to cool on baking sheet for at least a half hour before removing. This is important, otherwise the middle of the cookie will not be fully cooked and will stick to the pan, leaving you with a cookie-donut.

Frost with a thin layer of chocolate frosting. Let the kids help with this step too, they will love you forever!

  1. That picture of your kiddos is so incredibly adorable!! I remember always being thrilled to 'help out' in the kitchen when I was young. I'm sure you're creating beautiful memories for them both.

  2. I second Jenna's comment--your kids are too cute! I remember making French bread with my dad when I was about three, and it's one of the sweetest memories I have. Plus, I'm sure your kids don' hate reaping the rewards of their hard work! ;)

These look delicious, Heather. You can never go wrong with peanut butter and chocolate!

  3. Thanks ladies, I think my kids are cute too, but I *might* be a little bit biased. Amy, you're right, they definitely liked reaping the rewards, my 16 month old has been walking around saying "coo-coo coo-coo," loosely translated: "Please give me a cookie now, Mommy dearest."
